In the heart of Rome, within the elegant walls of a historic palazzo, guests are invited to uncover the secrets of the city’s most celebrated dishes. This immersive cooking class is designed to reveal not only how Roman pasta is made, but why it has remained a cornerstone of the city’s culinary identity for centuries. Led by an English-speaking chef, every participant takes part in a lively and flavorful experience that celebrates tradition, taste, and conviviality.
The class opens with a toast of Prosecco, accompanied by small Roman-style appetizers that awaken the palate. This warm welcome sets the stage for the afternoon ahead, where history and hands-on practice come together in our modern yet atmospheric kitchen and dining room. Guests are encouraged to relax, sip, and take in the unique atmosphere before diving into the art of pasta-making.
The experience begins with the foundation of it all: fresh pasta dough. With expert guidance, participants learn how to achieve the perfect texture, supple and elastic, ready to be transformed into timeless Roman plates.
The lesson then turns to the heart of Roman cooking: the sauces. Each one tells a story of the city itself. Carbonara, born in the mid-20th century, reflects post-war Rome with its simple yet indulgent combination of eggs, pecorino, and guanciale. Cacio e Pepe, whose roots stretch back to ancient shepherds carrying aged pecorino and black pepper on their journeys, showcases the beauty of simplicity elevated to perfection. Amatriciana, originating in the hilltop town of Amatrice, combines tomatoes and guanciale in a robust sauce beloved in Roman trattorie for centuries. Every recipe is prepared with fresh seasonal ingredients, with the chef weaving history and anecdotes into the process.
After cooking, guests sit down together to enjoy the dishes they have created. Each pasta is served with a thoughtfully selected local wine that enhances its flavors, though soft drinks are also available for those who prefer. To conclude on a sweet note, a homemade Italian dessert is served, prepared in advance by our kitchen team, ensuring a memorable finale to the meal.
This three-hour experience is more than a cooking class—it is a bridge to Roman heritage, leaving participants with the skills and knowledge to recreate these legendary dishes back home. With every forkful of pasta, guests will relive not only the tastes of Rome but also the stories that make them unforgettable.
